Ingredients

  • 7 oz (200 g) graham crackers or digestive biscuits
  • 4 tbsp (55 g) butter, melted
  • 8 oz (225 g) cream cheese, softened
  • 1/2 cup (60 g) powdered sugar
  • 1 tsp vanilla extract
  • 1 cup (240 ml) cold heavy cream
  • 2 cups (300 g) strawberries, hulled and chopped
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice

Method

  1. 1

Simmer half the strawberries with the sugar and lemon juice for 5 minutes until syrupy. Cool completely, then stir in the remaining fresh strawberries.

  2. 2

Crush the biscuits into fine crumbs and mix with the melted butter. Divide between 6 small jars and press down lightly.

  3. 3

Beat the cream cheese, powdered sugar and vanilla until smooth.

  4. 4

In another bowl, whip the cream to soft peaks, then fold it into the cream cheese mixture.

  5. 5

Spoon or pipe the cheesecake mixture over the crumbs, then top with the strawberry sauce.

  6. 6

Chill for at least 1 hour before serving.
